Skinny Burgers

Skinny and burger are not two words you would normally put together.   In this recipe however skinny and burger go together like peanut butter and jelly, like cowboy boots and dance floors, like country girls and Luke Bryan!  You didn't think I was going to write an entire blog and NOT mention Luuuuke did you?  

But let's get back to eating burgers and feeling skinny!  

I love to cook with ground turkey.  It's my go to skinny protein, and I've already jazzed it up a couple of different ways this week! Turkey doesn't have much flavor, but it soaks up whatever profile you want to add to it.  Think of ground turkey as a blank canvas, and you are the food painter!  What portrait do YOU want to paint tonight? 

I also love to throw everything into a bowl.  Form the patties in the bowl, and then slap em' in the oven.  It's an quick preparation and easy clean up!   Like this...



Here's tonight's food portrait...

Skinny Chipotle Lime Taco Burgers

1 lb. ground turkey
1/2 package taco seasoning
1 tsp. cayenne pepper 
1/2 fresh lime juice
2 garlic cloves
1/2 white onion
1/2 cup fresh cilantro 
1 chipotle pepper
1 egg
1/2 cup bread crumbs
salt and pepper

Preheat oven to 400 degrees. 

In large bowl add ground turkey.  Add a little salt and pepper. Chop garlic, onion, and cilantro.  Throw it into a bowl with the ground turkey.  Then add taco seasoning, cayenne pepper, lime juice, chipotle pepper, egg, and bread crumbs.  

Mix gently with your hand.  Do not over mix.  It will make the meat tough.  Then form into 4 patties.  



Put in a baking pan lined with tin foil and add a little olive oil to the top of each burger.  

Bake 20 - 22 minutes.  

I serve them with roasted veggies that I bake at the same time with the burgers.  



Nosh on these for a day or two.  Or feed them to the whole family and know that they are getting a lot of nutrition on the cheap, AND it's healthy!

  1. I've never baked them....I'll have to try it. I usually add a container of blue cheese to mine. =)
